In QuickBooks Online connected Purchase Order/Bill/Expense/Sales Invoice workflows, you can set certain fields as mandatory or optional for Requesters to fill in during request creation.
This is done in the Requester matrix:

Please note: If a field has been set as mandatory for Requesters, it will not be possible to submit requests without filling it in.
