How can I change the email address to which the daily summaries are sent

Daily summary emails stating all pending approval documents are sent to the Requester.

Approvers receive their own notifications about open requests – if they have activated the option of daily notifications in My profile.

The Requester is set in the Pull from Oracle NetSuite/Creation section of the respective approval workflow; usually that’s automatically the person who configures the workflow. Alternatively, you can enter a different email address here to have the daily summaries sent to that person.
